Ingredients
- 1.5 bananas (large, mashed)
- 56 g nonfat greek yogurt (plain or vanilla)
- 1 egg (medium)
- 30 ml cashew milk (or almond milk; use up to 60mL if needed for consistency)
- 25 g oat flour
- 20 g all purpose flour
- 24 g granular sugar substitute
- 1 scoop whey protein powder (vanilla or chocolate)
- 1.5 g baking soda
- 1 g baking powder
- salt (pinch)
- 48 ml egg whites
- 45 g nonfat greek yogurt
- 42 g light butter (melted)
- 2 g vanilla extract
- 48 g granulated brown sugar substitute
- 16 g dark cocoa powder
- 20 g all purpose flour
- 15 g chocolate protein powder (up to 20g)
- salt (pinch)
- chocolate chunks (optional mix-in and topping, to taste)
Steps
- 1
In a bowl, mix the banana bread wet ingredients: mashed bananas, 56g greek yogurt, the medium egg, and the milk.
- 2
In a separate bowl, mix the brownie batter wet ingredients: egg whites, 45g greek yogurt, melted light butter, and vanilla extract.
- 3
In two additional separate bowls, whisk together the respective dry ingredients for the banana bread (oat flour, 20g all purpose flour, sugar substitute, protein powder, baking soda, baking powder, salt) and the brownie layer (brown sugar substitute, cocoa powder, 20g all purpose flour, chocolate protein powder, salt).
- 4
Combine the wet and dry ingredients for each batter separately until just mixed. If desired, fold in chocolate chunks to the banana bread batter.
- 5
Line a loaf tin with parchment paper.
- 6
Pour a layer of the banana bread batter into the bottom of the lined loaf tin.
- 7
Pour the brownie batter layer over the banana bread layer.
- 8
Top with the remaining banana bread batter. You can swirl the layers slightly with a knife if desired. Add extra chocolate chunks on top if using.
- 9
Preheat your oven. If using a small oven, set to 310-315°F (155-157°C). If using a large oven, set to 350°F (175°C).
- 10
Bake for 30 to 50 minutes, depending on your oven size and desired level of gooeyness.
