Ingredients
- 175 g chicken breast (diced)
- 1 egg (beaten)
- 1 tbsp soy sauce (for the egg wash)
- 80 g cornflour (also known as cornstarch)
- 40 g plain flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.5 tsp ground ginger
- 0.5 tsp salt
- 0.5 tsp white pepper
- spray oil (for air frying)
- sesame seeds (for garnish)
- spring onion (for garnish)
- cooked rice (for serving)
- 0.5 orange zest (zest of 1/2 orange)
- 1 orange juice (juice of 1 orange)
- 2 tbsp rice vinegar
- 2 tbsp soy sauce (for the sauce)
- 2 tbsp honey
- 1 tbsp oyster sauce
- 1 clove garlic (grated)
- 1 tsp fresh ginger (grated)
- 2 tsp cornflour (mixed with 2 tsp water for slurry)
Steps
- 1
In a bowl, whisk together 80g cornflour, 40g plain flour, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp ground ginger, 1/2 tsp white pepper, and 1/2 tsp salt.
- 2
In a separate bowl, crack 1 egg and mix with 1 tbsp soy sauce using a fork.
- 3
Dip the diced chicken breast pieces into the beaten egg mixture until fully coated, allowing excess to drip off.
- 4
Transfer the chicken into the flour mixture. Press lightly to ensure a thorough coating and shake off any excess flour.
- 5
Place the coated chicken into your air fryer in a single layer. Spray with a little oil.
- 6
Cook the chicken in the air fryer at 200°C (400°F) for 12 minutes, flipping the pieces halfway through, until they are crispy and golden brown.
- 7
While the chicken is cooking, prepare the sauce. In a pan, combine the orange juice, orange zest, 2 tbsp soy sauce, 2 tbsp rice vinegar, 2 tbsp honey, 1 tbsp oyster sauce, grated garlic, and fresh ginger.
- 8
Bring the sauce mixture to a simmer over medium heat and cook for 3 minutes.
- 9
Stir in the cornflour slurry (2 tsp cornflour mixed with 2 tsp water) and cook for another minute until the sauce becomes glossy and thick enough to coat the back of a spoon.
- 10
Add the hot, crispy chicken into the pan with the orange sauce and toss until well coated.
- 11
Serve the orange chicken over cooked rice and garnish with sesame seeds and sliced spring onions.
Notes
The transcript mentions air frying at 200 degrees Celsius. For the best results, ensure the chicken is in a single layer to maintain crispiness.
