Homemade Pizza Pasta Sauce

Ingredients
- 1 tbsp olive oil
- 6 ripe tomatoes
- 5.5 dried red chillies
- warm water (for soaking the dried chillies)
- 2 tsp garlic (chopped)
- 1 onion (chopped)
- 1 tbsp Italian seasoning
- 9 fresh basil leaves
- 2 tsp sugar
- 2 tsp red chilli flakes

Soak the dried red chillies in warm water until softened.

Heat 1 tablespoon of olive oil in a pan over medium-high heat.

Add the 6 ripe tomatoes to the pan and cook until they are charred and the skins begin to blister.

Add the chopped onion and 2 teaspoons of chopped garlic to the pan. Sauté until the onions are translucent and fragrant.

Stir in the soaked red chillies, 1 tablespoon of Italian seasoning, 2 teaspoons of sugar, and 2 teaspoons of red chilli flakes.

Add the fresh basil leaves and continue to cook for a few minutes until the flavors meld and the tomatoes have broken down into a sauce-like consistency.

For a smoother sauce, blend the mixture in a blender or use an immersion blender until it reaches your desired consistency.
Notes
