Ingredients
- 0.33 cup extra-virgin olive oil (plus more if needed to submerge capers)
- 0.25 cup capers (rinsed and dried)
Steps
- 1
Combine 1/3 cup extra-virgin olive oil and 1/4 cup rinsed and dried capers in a medium microwave-safe bowl.
- 2
Ensure the capers are mostly submerged in the oil.
- 3
Microwave the mixture for about 5 minutes total, stirring halfway through the cooking time.
- 4
Continue microwaving until the capers have darkened in color and shrunk significantly.
- 5
Using a slotted spoon, transfer the fried capers to a plate lined with paper towels.
- 6
Allow the capers to cool completely; they will continue to crisp up as they sit.
- 7
Reserve the flavorful caper-infused oil for drizzling or use in vinaigrettes.
Notes
The fried capers are excellent on chicken piccata, roasted vegetables, creamy polenta, or white bean soup. The infused oil is a 'two-for-one' bonus that can be used as a finishing oil or a salad dressing base.
