Cola Chicken Wings

Ingredients
- 500 g chicken wings (washed with salt and water)
- 2 scallions (for the initial boil and chopped for garnish)
- 4 rodajas ginger (divided between boiling and stir-frying)
- 1 tbsp cooking wine (Shaoxing or similar)
- 1 tbsp vegetable oil (for frying)
- 1 star anise
- 1 tsp sugar
- 1 tbsp light soy sauce
- 1 tsp dark soy sauce
- 1 lata cola (approximately 330 ml)
- salt (for washing the chicken)
- water (for boiling)

Wash the chicken wings with a bit of salt and water to clean them thoroughly.

Place the wings in a pot with cold water. Add scallions, a few ginger slices, and a splash of cooking wine.

Bring to a boil. Skim off the foam that rises to the surface, drain the wings, and set them aside.

Heat a bit of oil in a pan and fry the wings until both sides are golden brown.

Add a few ginger slices, one star anise, a bit of sugar, light soy sauce, dark soy sauce, and a can of cola to the pan.

Cover the pan and let everything simmer over low heat for about 8 minutes.

Uncover the pan and cook over high heat, stirring constantly, until the sauce reduces and becomes thick and glossy.

Sprinkle with chopped scallions and serve immediately.
Notes
The step of boiling the wings in cold water with aromatics helps remove impurities and ensures the chicken stays tender. Dark soy sauce is mainly used to provide that characteristic deep amber color.
