Ingredients
- 2 tbsp red curry paste
- 2 tbsp peanut butter
- 2 garlic (crushed cloves)
- 1 inch ginger (grated)
- 400 ml coconut milk
- 800 ml chicken stock
- 1 stalk lemongrass
- 2 tbsp fish sauce
- 1 lime juice (juice of 1 lime)
- 6 frozen dumplings
- 200 g cooked udon noodles
- 2 handfuls choi sum leaves
- 2 boiled eggs (halved)
- coriander leaves (a few leaves, for serving)
- black sesame seeds (to serve)
- chilli oil (to serve)
Steps
- 1
Place the red curry paste, peanut butter, crushed garlic, grated ginger, coconut milk, chicken stock, lemongrass, fish sauce and lime juice in a pan.
- 2
Bring the mixture to a boil over medium heat. Whisk until there are no lumps of curry paste or peanut butter.
- 3
Cover the pan, reduce the heat to low, and cook for 10 minutes to allow the flavours to develop.
- 4
Increase the heat until the soup reaches a gentle bubble, then add the frozen dumplings.
- 5
Cover and cook for 5–6 minutes, or until the dumplings are floating.
- 6
Add the cooked udon noodles and choi sum leaves.
- 7
Cover and cook for 2–3 minutes, until the noodles have separated.
- 8
Divide the noodles, dumplings and soup between two bowls.
- 9
Top each bowl with the halved boiled eggs, coriander leaves, black sesame seeds and chilli oil. Serve immediately.
Notes
The source specifies cooked udon noodles but does not provide instructions for cooking them. The quantity of coriander, black sesame seeds and chilli oil is left to serving preference.
