Ingredients

  • 1 lb wide rice noodles (fresh, separated)
  • 0.5 lb shrimp (peeled and deveined)
  • 1 bunch Chinese broccoli (thinly cut on a bias (Gai Lan))
  • 3 garlic (cloves, minced)
  • 2 eggs
  • 1 tbsp soy sauce (regular light soy sauce)
  • 1 tbsp dark soy sauce (for color and caramelization)
  • 1 tsp fish sauce
  • 2 tbsp oyster sauce
  • 1 tsp sugar
  • 2 tbsp cooking oil (divided)
  • chili oil (for topping)

Steps

    Prepare the ingredients: separate the wide rice noodles so they don't stick together, peel and devein the shrimp, and thinly cut the Chinese broccoli on a bias.

    In a small bowl, whisk together the regular soy sauce, dark soy sauce, fish sauce, oyster sauce, and sugar to make the stir-fry sauce.

    Heat a wok or large skillet over high heat with a tablespoon of oil. Add the shrimp and sauté until they are just pink and cooked through. Remove the shrimp from the pan and set aside.

    In the same pan, add another tablespoon of oil if needed. Add the minced garlic and sliced Chinese broccoli. Stir-fry until the broccoli is slightly softened and the garlic is fragrant.

    Push the broccoli and garlic to one side of the pan. Crack the eggs into the empty space and scramble them until mostly set.

    Add the rice noodles into the pan.

    Pour the prepared sauce over the noodles and toss everything together over high heat until the noodles are well-coated and slightly caramelized.

    Add the cooked shrimp back into the pan and toss briefly to reheat.

    Serve immediately, topped with chili oil for extra heat.

Notes

If you cannot find fresh wide rice noodles, you can use dried wide rice sticks, but ensure they are soaked in warm water until pliable before stir-frying. Dark soy sauce is essential for the signature deep color and slightly sweet, caramelized flavor of Pad See Ew.
