Ingredients

  • 10 cloves garlic (chopped; source gives a range of 10–15 cloves)
  • 1 white onion (chopped)
  • chicken stock (as needed)
  • shrimp stock (as needed)
  • 1 tbsp patis (fish sauce)
  • black pepper (to taste; used in broth and dumpling filling)
  • 500 g ground pork
  • 250 g shrimp (peeled and chopped)
  • 0.5 cup spring onions (chopped, for dumpling filling)
  • 0.5 cup singkamas (jicama) (finely chopped)
  • Maggi Magic Sarap (as needed)
  • 1 tsp onion powder
  • 1 tbsp oyster sauce
  • 1 egg
  • 2 tbsp cornstarch
  • Molo / dumpling wrappers (as needed)
  • spring onions (for topping)
  • chili-garlic oil (for topping)
  • crispy garlic (for serving; mentioned in the instructions, amount not specified)

Steps

  1. 1

Combine the ground pork, chopped shrimp, chopped spring onions, finely chopped singkamas, Maggi Magic Sarap, onion powder, oyster sauce, egg, cornstarch, and black pepper in a bowl. Mix until evenly combined.

  2. 2

Place some filling in each Molo wrapper. Fold and seal the wrappers into your preferred shape, then set the dumplings aside.

  3. 3

In a pot, sauté the chopped garlic until toasted.

  4. 4

Add the chopped onion to the pot.

  5. 5

Pour in chicken stock and shrimp stock, using enough for the desired amount of broth. Bring to a gentle simmer.

  6. 6

Season the broth with patis and black pepper to taste.

  7. 7

Add the dumplings to the simmering broth and cook for about 8–15 minutes, depending on their size.

  8. 8

Serve hot, topped with spring onions, crispy garlic, and chili-garlic oil.

Notes

The source says most measurements are estimates and recommends seasoning to taste. Stock, dumpling wrappers, and Maggi Magic Sarap are listed as needed, with no quantities specified. The instructions do not specify how much stock to use or how to make the crispy garlic.
