Ingredients
- 3 chorizo sausage (Sliced into small discs)
- 2 potatoes (Whole potatoes, chopped)
- 1 onion (Chopped)
- 8 cloves garlic (Sliced)
- chicken stock (As needed)
- 1 bunch kale (Roughly chopped)
- pepper (As needed)
Steps
- 1
Slice the chorizo sausages into small discs. Place them in a hot pan and fry until their fat renders and the pieces are crisp. Remove the chorizo from the pan and set it aside, leaving the rendered chorizo oil in the pan.
- 2
Add the chopped onion, chopped potatoes, and sliced garlic to the pot or pan containing the chorizo oil. Sauté until the vegetables have softened.
- 3
Pour in enough chicken stock to cover the vegetables as needed. Simmer until the potatoes are soft.
- 4
Blend the soup until it forms a rich broth with a thick consistency.
- 5
Add the reserved crisp chorizo and the roughly chopped kale back into the soup. Serve hot and enjoy.
Notes
The source does not specify the amount of chicken stock, the quantity of pepper, the exact simmering time, or whether the kale should be cooked after being added. Add stock as needed to achieve the stated thick consistency.
