  • 1 tsp Crispy chilli oil (For the tuna mix)
  • 2 Garlic (Minced; for the garlic brush)
  • 1 tbsp Butter (For the garlic brush)
  • 1 tbsp Olive oil (For the garlic brush)
  • 2 tbsp Coriander (Diced; for the garlic brush)
  • 1 loaf Sourdough loaf (Cut into slices for the toasties; loaf size unspecified)
  • 2 slices Red Leicester cheese
  • 2 slices Mozzarella
  • 3 tbsp Kewpie mayonnaise (For the sesame chipotle mayo)
  • 0.5 tsp Sesame oil (For the sesame chipotle mayo)
  • 1 tbsp Crispy chilli oil (For the sesame chipotle mayo)
  • 1 tsp Honey (For the sesame chipotle mayo)

Steps

  1. 1

Prepare the Jeow Som sauce by placing its garlic, Thai chillies, chopped coriander, fish spice, lime juice, sugar, and honey in a pestle and mortar. Pound together until combined. Taste, then adjust with more sugar or honey for sweetness, or more lime juice for acidity, as desired.

  2. 2

Dice the chives, dill, coriander, red onion, and pickled chillies and peppers. Finely chop the spring onion greens, and grate the garlic.

  3. 3

Put the tuna, prepared herbs and vegetables, sesame seeds, lemon juice, 1/2 cup Kewpie mayonnaise, sesame oil, and crispy chilli oil in a bowl. Mix until combined.

  4. 4

Stir together the 3 tablespoons Kewpie mayonnaise, 1/2 teaspoon sesame oil, 1 tablespoon crispy chilli oil, and 1 teaspoon honey to make the sesame chipotle mayo.

  5. 5

Mix the minced garlic, butter, olive oil, and diced coriander to make the garlic brush.

  6. 6

Slice the sourdough loaf into bread slices for the toasties. Spread the sesame chipotle mayo on the bread, add the tuna mixture, then layer on the Red Leicester and mozzarella slices. Close the sandwiches.

  7. 7

Brush the outside of the bread with the garlic-butter mixture.

  8. 8

Pan-fry the toasties until golden brown. Once the cheese has melted, brush the toasties again and cook for a few more minutes, until toasted.

Notes

The source does not specify pack sizes, loaf size, toastie count, pan heat, or exact cooking time. Its pan-frying instruction is grammatically unclear, especially regarding when to brush the toastie again; the method above follows the stated order as closely as possible. It does not explain how the Jeow Som sauce is served with the toastie.
