Ingredients

  • 500 g lamb shoulder (Cut into small cubes.)
  • oil (For frying.)
  • 1 onion (Large, chopped.)
  • 6 garlic (Use 6–10 cloves, chopped.)
  • 3 tbsp tomato paste
  • 2 tsp ginger
  • 1 tbsp ground turmeric
  • 1 tsp cinnamon
  • 1 tsp ground cumin
  • 0.75 cup chickpeas
  • 0.75 cup brown lentils
  • crushed tomatoes (Amount not specified.)
  • beef broth (Add as needed until the pot is full.)
  • 1 celery (Stalk with leaves, finely chopped and cubed.)
  • 1 bunch cilantro (Chopped.)
  • 1 bunch parsley (Chopped.)
  • 0.5 cup vermicelli (Broken.)
  • flour slurry (Amount and composition not specified; use to thicken the soup.)
  • salt (To taste.)
  • black pepper (To taste.)
  • lemon (For a squeeze when serving; amount not specified.)

Steps

  1. 1

Heat oil in a large pot over cooking heat. Add the cubed lamb shoulder and sear until browned. Remove the lamb from the pot and set it aside.

  2. 2

Add the chopped onion and garlic to the pot and stir. Return the seared lamb to the pot.

  3. 3

Add the tomato paste and stir until well combined.

  4. 4

Add the chopped celery and its leaves, followed by the ginger, turmeric, cinnamon, and cumin. Stir to distribute the aromatics and spices.

  5. 5

Add the brown lentils, chickpeas, and crushed tomatoes.

  6. 6

Pour in enough beef broth to fill the pot. Cook for about 40 minutes, or until the lentils are soft.

  7. 7

Add the chopped cilantro, chopped parsley, and broken vermicelli. Season with salt and pepper to taste.

  8. 8

Cook for about 15 minutes, until the vermicelli is cooked.

  9. 9

Add the flour slurry and stir to thicken the soup. The source does not specify the slurry proportions or an exact thickening time.

  10. 10

Serve the harira with a squeeze of lemon and enjoy.
