Garlic Parmesan Chicken

Ingredients
- 1 lb chicken breast (cut into bite-sized pieces)
- 0.5 cup all-purpose flour (for coating)
- 1 tsp garlic powder
- 1 tsp paprika
- salt (to taste)
- black pepper (to taste)
- 4 tbsp unsalted butter (divided)
- 4 garlic (cloves, minced)
- 0.25 cup parmesan cheese (grated)
- 1 tbsp fresh parsley (chopped, for garnish)
- 2 tbsp vegetable oil (for frying)

Cut the chicken breast into bite-sized cubes and pat them dry with a paper towel.

In a shallow bowl, combine the all-purpose flour, garlic powder, paprika, salt, and black pepper.

Dredge the chicken pieces in the flour mixture until they are evenly coated, shaking off any excess.

Heat the vegetable oil and 1 tablespoon of butter in a large skillet over medium-high heat.

Add the chicken to the skillet in a single layer, working in batches if necessary to avoid overcrowding.

Fry the chicken for 3-4 minutes per side until golden brown and cooked through (internal temperature of 165°F / 74°C). Remove the chicken from the pan and set aside.

Wipe out the skillet and melt the remaining 3 tablespoons of butter over medium heat.

Add the minced garlic to the butter and sauté for 1 minute until fragrant, being careful not to burn it.

Return the cooked chicken to the skillet and toss thoroughly to coat in the garlic butter.

Remove the skillet from the heat and sprinkle the grated parmesan cheese and fresh parsley over the chicken. Toss one last time and serve immediately.
Notes
For a crispier finish, ensure the oil is hot before adding the chicken. If you prefer a saucier version, you can add a splash of heavy cream or chicken broth to the garlic butter before adding the chicken back in.
