Sheet Pan Caramelized Onion Pasta

Ingredients
- 3 yellow onions (thinly sliced)
- 1 cabeza garlic (cut in half for roasting)
- 2 tbsp olive oil (for drizzling)
- 1 cup coconut milk (canned, full-fat for extra creaminess)
- 0.5 lemon juice (fresh)
- 2 cups spinach or kale (chopped)
- 1 lb pasta (cooked separately according to package instructions; use gluten-free if desired)
- salt and pepper (to taste)

Preheat the oven to 400°F (200°C).

In a large baking sheet or roasting dish, place the sliced onions and the halved head of garlic.

Drizzle generously with olive oil and season with salt and pepper. Toss the onions to ensure they are well coated.

Bake for 40-45 minutes, stirring the onions halfway through, until they are golden brown and caramelized.

While the vegetables are roasting, cook the pasta in a pot of boiling salted water until al dente. Drain and set aside.

Once the onions are ready, remove the tray from the oven. Squeeze the roasted head of garlic to extract the soft cloves directly onto the tray.

Add the coconut milk, lemon juice, and greens of your choice (spinach or kale) to the hot tray.

Mix everything well to combine the roasted garlic and coconut milk, forming a creamy sauce with the onions.

Stir the cooked pasta into the tray and toss until completely coated with the caramelized onion sauce. Serve hot.
Notes
This recipe is ideal for meal prepping. If the sauce thickens too much when reheating, add a splash of water or more coconut milk.
