Ingredients

  • 2 yellow onions (large, sliced into half-moons)
  • 1 head garlic (top sliced off to expose cloves)
  • 2 tbsp olive oil (for roasting)
  • 1 tbsp balsamic vinegar (to help caramelization)
  • salt and pepper (to taste)
  • 1 lb pasta (short shape like rotini or penne; use gluten-free if desired)
  • 0.5 cup coconut milk (full fat canned for creaminess)
  • 0.5 lemon lemon juice (freshly squeezed)
  • 2 cup spinach (or other greens of choice)

Steps

    Preheat your oven to 400°F (200°C).

    Place the sliced onions and the whole head of garlic (with the top cut off) onto a large baking tray.

    Drizzle the onions and garlic with olive oil and balsamic vinegar, then season with salt and pepper. Toss the onions to coat evenly.

    Bake in the oven for approximately 40-45 minutes, or until the onions are soft, deep golden brown, and caramelized.

    While the vegetables roast, cook your pasta in a large pot of salted boiling water according to the package directions until al dente. Reserve a small amount of pasta water before draining.

    Remove the tray from the oven. Carefully squeeze the roasted garlic cloves out of their skins directly onto the tray with the onions.

    Add the lemon juice, greens of choice (such as spinach), and coconut milk to the tray.

    Stir everything on the tray together to mash the garlic and create a creamy sauce with the caramelized onions.

    Add the cooked pasta to the tray and toss thoroughly until every noodle is coated in the sauce. If the sauce is too thick, add a splash of the reserved pasta water.

    Serve immediately while hot.

Notes

For a deeper flavor, you can add a pinch of dried thyme or red pepper flakes to the onions before roasting. If you don't like coconut milk, any thick unsweetened plant-based cream or cashew cream will work as a substitute.
