Chicken Caesar Smash Tacos

Ingredients
- 2 lb minced chicken (divided into 10 equal portions)
- 10 mini tortillas
- salt (to taste)
- black pepper (to taste)
- oil (for cooking)
- 1 cup mayonnaise
- 2 tsp Dijon mustard
- 3 tbsp olive oil
- 1 tsp Worcestershire sauce
- 2 tsp lemon juice
- 3 cloves garlic (freshly minced)
- 1 tsp black pepper (for dressing)
- 1 large romaine lettuce (diced)
- 0.33 cup parmesan cheese (shredded or shaved)
- 1 cup croutons

Divide the 2 lbs of minced chicken into 10 equal portions.

Place 2-3 tablespoons of ground chicken in the center of each mini tortilla, pressing down gently to create an even layer that covers the surface. Sprinkle the chicken with salt and black pepper.

Heat a skillet over high heat with a small amount of oil.

Place the tortillas meat-side down in the skillet. Reduce heat to medium-low and cook for 2-3 minutes or until the chicken is cooked through.

Flip the tacos and cook the tortilla side until it is crispy and golden brown.

In a medium bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, minced garlic, salt, and 1 tsp black pepper.

While whisking constantly, slowly pour in 3 tbsp of olive oil until the dressing is smooth and emulsified.

To assemble, top each cooked taco with a handful of diced romaine lettuce, shaved parmesan cheese, and croutons.

Notes
For the best flavor, ensure the garlic is freshly minced. You can use store-bought croutons or make your own by toasting bread cubes with olive oil and garlic salt.
