Ingredients

  • 2 lb ribeye or sirloin steak (cubed)
  • 1 tbsp neutral oil (for steak marinade)
  • 2 tsp Worcestershire sauce
  • 2 tsp garlic powder
  • salt (to taste (generous amount))
  • black pepper (to taste (generous amount))
  • 1 yellow onion (large, sliced)
  • 1 tsp granulated sugar
  • salt (heaping pinch)
  • 12 tbsp unsalted butter
  • 5 garlic cloves (minced)
  • 1 shallot (minced)
  • 1 lemon (freshly squeezed)
  • 1 tbsp Dijon mustard
  • 1 tbsp parsley (heaping, chopped)
  • 1 tbsp chives (heaping, chopped)
  • 1 tsp thyme
  • 1 tsp cayenne powder (adjust to heat preference)
  • 0.5 tsp red chili flakes
  • 0.5 tsp smoked paprika
  • salt (to taste for butter sauce)

Steps

    Toss the cubed steak with 1 tablespoon neutral oil, 2 teaspoons Worcestershire sauce, 2 teaspoons garlic powder, and a generous amount of salt and pepper. Set the mixture aside to marinate while the pan heats.

    Heat a skillet over medium heat with a little oil or butter.

    Add the sliced yellow onion, 1 teaspoon sugar, and a heaping pinch of salt to the skillet. Cook for 15-20 minutes, stirring occasionally, until the onions are soft, golden, and jammy. Remove the onions from the pan and set aside.

    Crank the heat to medium-high or high.

    Add the marinated steak to the pan in a single layer. Work in batches if needed to avoid crowding the pan.

    Sear the steak for 2–3 minutes per side until deeply browned. Remove the steak from the pan and set aside. Lower the heat to medium.

    Add 12 tablespoons of unsalted butter to the same pan. Once melted, add the minced garlic and minced shallot.

    Cook the garlic and shallot for approximately 30 seconds until fragrant.

    Stir in the lemon juice, 1 tablespoon Dijon mustard, chopped parsley, chopped chives, 1 teaspoon thyme, 1 teaspoon cayenne, 1/2 teaspoon chili flakes, 1/2 teaspoon smoked paprika, and salt to taste.

    Add the seared steak back to the pan.

    Toss the steak to coat thoroughly in the cowboy butter sauce for 1–2 minutes.

    Serve immediately over creamy mashed potatoes.

Notes

You can adjust the cayenne powder to your heat preference. The recipe suggests serving over creamy mashed potatoes for a complete meal.
