Ingredients

  • 20 g runny honey
  • 1 tsp hot sauce
  • chilli flakes (to taste)
  • 250 g chicken mince (lean/low fat recommended)
  • 1 tsp garlic granules
  • 1 tsp onion granules
  • 1 tsp smoked paprika
  • 2 light cheese slices
  • 2 brioche buns
  • roundhead lettuce leaves
  • 20 g ranch sauce

    In a small bowl, mix together the 20g runny honey, 1 tsp hot sauce, and chilli flakes. Set this hot honey mixture to one side.

    In a separate bowl, season the 250g chicken mince with 1 tsp garlic granules, 1 tsp onion granules, and 1 tsp smoked paprika. Mix until well combined.

    Split the seasoned chicken mince into four equal-sized balls.

    Heat a pan over high heat. Transfer the chicken balls to the hot pan.

    Cover the chicken balls with a piece of baking paper. Using a spatula or a burger press, firmly flatten the balls into thin patties.

    Fry the patties for approximately 8 minutes in total, flipping them halfway through the cooking time.

    Drizzle half of the prepared hot honey mixture over the patties, flip them once more, and cook for a further minute.

    Top two of the patties with the light cheese slices. Place the other two patties directly on top of the cheesed ones to create two double-patty stacks.

    Remove the pan from the heat and leave the stacks in the pan for a moment to allow the cheese to melt completely.

    Meanwhile, toast the brioche buns until golden.

    Assemble the burgers by placing lettuce on the bottom buns, followed by the double chicken stacks. Top with 20g ranch sauce and the remaining hot honey before closing the buns.

Notes

Nutritional information per burger: 448 calories, 33g protein, 14g fat, 45.2g carbs. Using baking paper while smashing prevents the chicken from sticking to your spatula or press.
