Steps
- 1
Place the chicken tenders in a bowl. Add the buttermilk, hot sauce, paprika, garlic powder, onion powder, salt, and black pepper. Mix until the chicken is evenly coated, then marinate for at least 30 minutes.
- 2
In a separate bowl, combine the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper if using, salt, black pepper, and baking powder.
- 3
Spoon a few tablespoons of the chicken marinade into the flour mixture. Rub it in with your fingers to form small flour clumps for an extra-crispy coating.
- 4
Coat each chicken tender thoroughly in the flour mixture, pressing the coating firmly onto the chicken.
- 5
Heat frying oil to 350°F (175°C). Fry the coated tenders until golden and crispy, and the internal temperature reaches 165°F (74°C).
- 6
For the sauce, melt the butter in a pan over low heat.
- 7
Add the ketchup, honey, Worcestershire sauce, brown sugar, vinegar, garlic powder, paprika, and black pepper to the melted butter.
- 8
Stir over low heat until the sauce is smooth and well combined.
- 9
Pour the warm honey BBQ sauce over the crispy chicken tenders and toss until evenly coated.
- 10
Serve immediately with a favorite dipping sauce; the author used garlic Parmesan sauce.
