Ingredients

  • 2 tbsp Butter (For the chicken filling)
  • 0.5 cup Yellow onion (Finely chopped)
  • 1 tbsp Fresh garlic (Minced)
  • 2 cup Rotisserie chicken (Shredded)
  • Salt (To taste; taste the filling before adding)
  • 1 tsp Garlic powder
  • 0.5 tsp Black pepper (Powder)
  • 1 tsp Paprika (Powder)
  • 1 tsp Red chili flakes
  • 0.25 cup Unsweetened heavy whipping cream (Additional cream may be added a teaspoon at a time if the mixture is too thick; the source gives no total for extra cream)
  • 5 tbsp Cream cheese
  • 0.25 cup Green onion (Chopped)
  • 0.25 cup Parmesan cheese (Freshly grated)
  • 1 tbsp Parsley (Chopped)
  • 6 Bread (Slices; of choice)
  • 1.5 cup Mozzarella cheese (Shredded)
  • Butter (For buttering the outside of the bread for toasting; quantity not specified)

Steps

  1. 1

Melt the 2 tablespoons of butter in a skillet over medium heat.

  2. 2

Add the finely chopped onion and cook for 4–5 minutes, until soft and lightly golden.

  3. 3

Add the minced garlic and cook for 30 seconds.

  4. 4

Add the shredded rotisserie chicken, garlic powder, black pepper, paprika, and red chili flakes. Stir well and cook for 2 minutes, coating the chicken evenly with the seasonings.

  5. 5

Lower the heat. Add the cream cheese and measured heavy cream, stirring until smooth and combined.

  6. 6

Fold in the grated Parmesan. If the mixture is too thick, add more heavy cream a teaspoon at a time; no amount is specified for this extra cream.

  7. 7

Stir in the chopped green onion and parsley.

  8. 8

Taste the filling, then add salt to taste. It should be creamy and thick, not runny.

  9. 9

Butter the outside of each bread slice.

  10. 10

On the unbuttered side of a bread slice, layer mozzarella, a generous amount of creamy chicken filling, and more mozzarella; top with a second bread slice, buttered side facing out. Divide the filling and cheese evenly among three sandwiches.

  11. 11

Cook the sandwiches in a skillet over medium-low heat for about 3–4 minutes per side, until the bread is deeply golden and crisp and the cheese has melted.

  12. 12

If needed, briefly cover the pan to help the centers melt, then uncover it to keep the crust crisp.

  13. 13

Let each sandwich rest for about 1 minute before slicing and serving.

Notes

The source does not specify how much extra heavy cream to add if the filling is too thick, or an exact amount of butter for toasting; add cream a teaspoon at a time as directed and butter the bread as needed.
