Ingredients

  • 6 flour tortillas
  • 2 chicken breasts (cut into strips)
  • 2 garlic cloves (finely chopped)
  • 0.5 tsp ground cumin
  • 1 tsp chilli powder
  • 1 lime (juice only)
  • 2 tbsp olive oil (use in two additions)
  • 1 red onion (thinly sliced)
  • 1 tbsp peppers (preferably different colours; thinly sliced)
  • salt (to taste)
  • freshly ground black pepper (to taste)
  • 1 avocado (optional topping; peeled, de-stoned and mashed)
  • iceberg lettuce (optional topping; a handful, shredded)
  • fresh coriander (optional topping; a handful, leaves picked)
  • salsa (optional topping; shop-bought or homemade)
  • soured cream (optional topping)
  • cheddar (optional topping; grated)

Steps

  1. 1

Preheat the oven to 120°C (100°C fan/Gas Mark ½). Wrap the tortillas in kitchen foil, place them on a baking tray, and warm in the oven until ready to use.

  2. 2

Put the chicken in a bowl with the garlic, cumin, chilli powder, and lime juice. Season with salt and pepper, then toss, rubbing the seasoning into the chicken. Set aside to marinate for 5 minutes.

  3. 3

Heat 1 tablespoon of the olive oil in a frying pan over high heat.

  4. 4

Add the chicken strips and cook for 5 minutes, until cooked through, golden-brown, and slightly catching on the edges.

  5. 5

Add the remaining 1 tablespoon of olive oil to the pan.

  6. 6

Add the onion and peppers and fry for 5 minutes, or until almost soft.

  7. 7

Increase the heat until the vegetables char slightly at the edges.

  8. 8

Top the warmed tortillas with the chicken and vegetable mixture. Serve with your chosen toppings.

Notes

The source gives an alternative tortilla-warming method: heat them in a dry frying pan over medium-high heat, turning once, until hot through and pliable. Chicken thighs or sliced tofu may replace the chicken breast. The stated prep and cook times are each 30 minutes, although the method itself specifies a 5-minute marinade and brief cooking times.
