Chinese-Style Shrimp Rolls
A healthy and crispy version of classic Asian rolls, made with rice paper wrappers and filled with a spiced shrimp paste, cooked in an air fryer.

- 300 g raw shrimps (peeled and cleaned)
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 0.5 tsp paprika
- 0.5 tsp ground ginger
- 0.5 tsp curry powder
- salt (to taste)
- pepper (to taste)
- 1 scallion (green part only, chopped)
- 6 rice paper wrappers
- water (to hydrate the wrappers)
- 1 tbsp olive oil (for spraying or brushing)
- 2 tbsp Teriyaki sauce (for serving)
- 1 tsp sesame seeds (for garnish)

In a food processor or chopper, place the raw shrimps, garlic powder, onion powder, paprika, ground ginger, curry powder, salt, pepper, and the chopped green part of the scallion.

Process the mixture until a smooth and homogeneous paste is obtained.

Dip a rice paper wrapper in a bowl of water for a few seconds until pliable and place it on a clean work surface.

Place approximately 2 tbsp of the shrimp filling in the center of the wrapper.

Fold the sides toward the center and roll tightly to form a cylinder shape. Repeat the process with the remaining wrappers.

Place the rolls in the air fryer basket, ensuring they do not touch to prevent sticking.

Brush or spray the rolls with a little olive oil.

Cook in the air fryer at 200°C (390°F) for 6 to 8 minutes, or until golden and crispy.

Serve the rolls hot with Teriyaki sauce and sprinkle with sesame seeds on top.
Notes
If the rice paper wrappers stick to the air fryer basket, you can use perforated parchment paper or grease the base well. Cooking time may vary depending on the air fryer model; the video mentions 180 degrees in the audio but 200 degrees in the text, it is recommended to monitor them after 6 minutes.
