Crispy Beef Skewers with Yogurt and Pickle Sauce

Ingredients
- 300 g ground beef
- 3 XL tortillas (wheat or corn)
- salt (to taste)
- pepper (to taste)
- parsley (to taste)
- olive oil (for cooking)
- 1 Greek yogurt (1 individual container)
- 1 tbsp mayonnaise
- 5 pickles (pickled)
- 1 garlic clove
- salt (for the sauce)
- pepper (for the sauce)
- 1 tsp olive oil (for the sauce)

Place an XL tortilla on a flat surface or workspace.

Spread a portion of the ground beef over the tortilla and flatten well with your hands or a spatula to create a very thin layer covering the entire surface of the tortilla.

Season the meat with salt, pepper, and parsley to taste.

Roll the tortilla tightly over the meat to form a cylinder.

Cut the roll into pieces of equal thickness (approximately 2-3 cm) and thread several pieces onto wooden skewers.

Place the skewers in the air fryer basket and spray with a little olive oil.

Cook at 190°C (375°F) for 12-14 minutes, making sure to turn them halfway through so they brown evenly.

While the skewers are cooking, prepare the sauce: in a small bowl, mix the Greek yogurt, the tablespoon of mayonnaise, the grated pickles, and the grated garlic clove.

Add salt, pepper, and a drizzle of olive oil to the sauce and stir well until fully combined.

Serve the skewers hot and crispy along with the yogurt sauce.
Notes
If you don't have an air fryer, you can try making them in the oven at a similar temperature until they are crispy. Ensure the meat layer is very thin so it cooks properly at the same time the tortilla toasts.
