Ingredients
- 5 potatoes (small/medium, peeled and cubed)
- 1 tbsp olive oil (for tossing potatoes)
- salt (for potatoes)
- black pepper (for potatoes)
- garlic powder (for potatoes)
- paprika (for potatoes)
- 2 chicken breasts (cubed (approx. 1 lb))
- 2 tbsp butter (for cooking chicken)
- 0.5 tsp salt (for chicken)
- 0.5 tsp black pepper (for chicken)
- 1 tsp paprika (for chicken)
- 1 tsp ranch seasoning (dry mix)
- 1 tsp onion powder
- 1 tbsp minced garlic
- 0.5 cup BBQ sauce (your favorite brand)
- 1 cup shredded mozzarella cheese
Steps
- 1
Peel and wash the potatoes, then cut them into small cubes.
- 2
Toss the potato cubes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- 3
Cook the potatoes in the air fryer at 400°F (200°C) for 20-25 minutes, shaking the basket a couple of times during cooking to ensure they get crispy on all sides.
- 4
While the potatoes are cooking, cut the chicken breasts into bite-sized cubes.
- 5
Heat a skillet over medium-high heat and melt the 2 tablespoons of butter.
- 6
Add the chicken to the skillet and season with 1/2 tsp each of salt and pepper, and 1 tsp each of paprika, ranch seasoning, and onion powder.
- 7
Cook the chicken until it is golden brown and cooked through.
- 8
Lower the heat and add the minced garlic to the skillet, cooking for about 1 minute until fragrant.
- 9
Pour in the 1/2 cup of BBQ sauce and stir to coat the chicken.
- 10
Add the crispy air-fried potatoes to the skillet and stir everything together until well combined.
- 11
Top the mixture with 1 cup of shredded mozzarella cheese.
- 12
Place the skillet under the oven broiler for a few minutes until the cheese is melted and bubbly. Alternatively, cover the skillet with a lid on the stove until the cheese melts.
Notes
The author notes that they don't use exact measurements for the potato seasonings, so adjust to your preference. For a faster version, you can leave the lid on the skillet to melt the cheese instead of using the broiler.
