Ingredients
- 200 g Noodles of your choice
- 2 Scallions (2-3, thinly sliced)
- 1 Garlic (1-2 cloves, minced)
- 1 TL Chili powder (1-2 tsp; adjust according to desired spiciness)
- 3 EL Oil (for heating)
- 2 EL Soy sauce
- 2 EL Tahini
- Pasta water (Reserve some cooking water and use as needed)
- Sesame seeds (for garnish)
- Cilantro or fresh herbs (as desired, for garnish)
- Lime juice or rice vinegar (optional, to taste)
Steps
- 1
Cook the noodles according to the package instructions. Reserve some pasta water when draining and set it aside.
- 2
Thinly slice the scallions and mince the garlic.
- 3
Place the scallions, garlic, and chili powder in a heatproof bowl.
- 4
Heat the oil. Carefully pour it over the scallion, garlic, and chili mixture, as the hot oil may splatter.
- 5
Let the mixture sit briefly so the flavors can develop and the hot oil can infuse the ingredients.
- 6
Add the soy sauce and tahini to the bowl and stir everything into a creamy sauce.
- 7
Gradually stir in some of the reserved pasta water. Add it by the spoonful until the sauce flows smoothly and reaches the desired consistency.
- 8
Add the cooked noodles to the sauce and toss thoroughly until they are evenly coated.
- 9
Garnish the chili tahini noodles as desired with sesame seeds and cilantro or other fresh herbs.
- 10
Optionally finish the noodles with a splash of lime juice or rice vinegar.
Notes
Adjust the spiciness by varying the amount of chili powder; if needed, start with less and add more later. A splash of lime juice or rice vinegar adds freshness and balances the heat. The reserved pasta water is important for combining the oil and tahini into a creamy sauce. The source does not specify exact amounts for the pasta water, sesame seeds, herbs, or lime juice or rice vinegar.
