Crispy Rice Paper and Cheese Bites
An incredibly simple and addictive snack made with rice paper and shredded cheese, which becomes extremely crispy in the microwave without the need for frying.

Ingredients
- 4 rice paper (circular sheets)
- 60 g shredded cheese (mozzarella or pizza-style, amount to taste)
- water (to dampen the rice paper)
Steps

Quickly dip each rice paper sheet in water to dampen it.

Place a damp rice paper sheet on a flat surface and spread a layer of shredded cheese over it.

Cover with a second damp rice paper sheet and press lightly so they stick together. Repeat the process with the other two sheets to form a second set.

Cut the rice paper and cheese sets into small, bite-sized pieces.

Place the pieces on a sheet of parchment paper, ensuring they do not touch each other too much.

Place in the microwave and cook at 600W for 2 minutes until they are puffed and crispy.
Notes
Ensure the parchment paper used is heat-resistant (up to 250°C). If they are not crispy enough after 2 minutes, add additional 10-20 second intervals. Do not use too much cheese, or it will be difficult to cut and may become chewy instead of crispy.
