Crispy Spiral Rice Paper Rolls with Hanpen and Cheese

An easy and fun recipe to use up leftover rice paper, filled with a creamy mixture of hanpen fish cake, crab sticks, and melted cheese.

Ingredients

  • 2 hanpen (fluffy white fish cakes)
  • 6 crab sticks (surimi)
  • 40 g shredded cheese (mozzarella or pizza type)
  • 2 tsp mayonnaise
  • 1 tsp chicken bouillon powder (consommé type)
  • 2 green onion (finely chopped)
  • 4 rice paper (circular sheets)
  • 1 tbsp vegetable oil (for frying)

Steps

  1. 1

    Place the crab sticks on a cutting board and, using chopsticks, move them up and down to shred them.

    Place the shredded crab sticks, hanpen fish cakes, shredded cheese, mayonnaise, chicken bouillon powder, and chopped green onion inside a resealable plastic bag.

    Seal the bag and knead and mash all ingredients well from the outside until a homogeneous mixture is obtained.

    Dip a sheet of rice paper in water to hydrate it and place it on the cutting board.

  5. 5

    Cut off a corner of the plastic bag and squeeze to pour a quarter of the mixture onto the rice paper.

    Roll the rice paper from front to back to form a long cylinder, then roll it onto itself to create a spiral shape. Repeat the process with the other 3 sheets.

    Heat a frying pan with vegetable oil over medium heat.

    Place the spirals in the pan and cook until both sides are golden brown and crispy.

Notes

If the rice paper sticks to the pan, make sure the oil is hot enough before adding them and do not move them too much until a crispy crust forms.
