Ingredients

  • 500 g All-purpose flour (plus extra for dusting)
  • 250 ml Whole milk (warm)
  • 75 g Unsalted butter (melted for dough)
  • 7 g Active dry yeast (1 sachet)
  • 50 g Granulated sugar (for dough)
  • 1 Egg (room temperature)
  • 0.5 tsp Salt
  • 2 Bananas (ripe, mashed for caramel)
  • 150 g Dark brown sugar (divided for caramel and filling)
  • 100 g Unsalted butter (softened for filling)
  • 2 tbsp Ground cinnamon
  • 200 g Cream cheese (softened for frosting)
  • 100 g Powdered sugar (for frosting)
  • 1 tsp Vanilla extract

Steps

    In a large bowl or the bowl of a stand mixer, combine warm milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.

    Add the melted butter, egg, salt, and flour to the yeast mixture. Mix until a dough forms.

    Knead the dough for about 8-10 minutes by hand or 5 minutes in a mixer until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours or until doubled in size.

    While the dough rises, prepare the banana caramel by sautéing mashed bananas with a portion of the dark brown sugar and a knob of butter in a small saucepan over medium heat until thickened and caramelized. Let cool completely.

    Punch down the risen dough and roll it out on a floured surface into a large rectangle.

    Spread the softened butter over the dough, then spread the cooled banana caramel on top. Sprinkle generously with the remaining dark brown sugar and cinnamon.

    Roll the dough tightly into a log and cut into 12 even rolls using a sharp knife or dental floss.

    Place rolls in a greased baking pan, cover, and let rise for another 30-45 minutes. Preheat oven to 350°F (175°C).
