5030 Cold Soy and Chicken Noodles

Ingredients
- 400 g Frozen Udon
- 2 Eggs (prepared as jammy eggs)
- 1 Cucumber (finely sliced)
- Salt (for cucumber pickling)
- Vinegar (for cucumber pickling)
- 1 Spring Onion (sliced)
- 1 tbsp Crispy Garlic (optional)
- 300 g Silken Tofu
- 1 tbsp Peanut Butter
- 1 tbsp Soy Sauce
- 1 tbsp Fish Sauce
- 4 Ice Cubes
- 250 g Chicken Mince
- 1 tsp Avocado Oil
- 1 tbsp Gochugaru
- 1 tbsp Dark Soy Sauce
- 1 tsp Salt (for chicken)
- 1 tbsp Toasted Sesame Seeds

Prepare the sauce by adding the silken tofu, peanut butter, soy sauce, fish sauce, and 4 ice cubes to a blender. Blend until completely smooth and chilled. Set aside in the fridge.

Finely slice the cucumber. In a small bowl, mix the cucumber slices with a pinch of salt and a splash of vinegar. Place in the fridge to pickle while you prepare the chicken.

Set a large frying pan over high heat. Once the pan is hot, add the avocado oil and the chicken mince.

Cook the chicken mince, breaking it up with a spatula, until it is golden brown and cooked through.

Add the gochugaru, dark soy sauce, 1 tsp salt, and toasted sesame seeds to the pan with the chicken. Stir to combine and cook for another minute until fragrant.

Cook the udon noodles according to package instructions. Immediately rinse them under cold running water or dunk them in a bowl of iced water to stop the cooking and chill them.

Squeeze the excess liquid from the chilled cucumbers.

To assemble, place the cold noodles in bowls. Pour the chilled tofu sauce over the top.

Top the noodles with the cooked chicken mince, pickled cucumbers, sliced spring onions, crispy garlic (if using), and a jammy egg.
Notes
