Ingredients

  • 4 bone-in, skin-on chicken thighs (about 1.5-2 lbs)
  • 1 lb baby potatoes (halved or quartered if large)
  • 1 lb asparagus (woody ends trimmed)
  • 3 tbsp olive oil (divided)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 0.5 tsp paprika
  • salt (to taste)
  • black pepper (to taste)

Steps

    Preheat your oven to 400°F (200°C).

    In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil and a pinch of salt and pepper.

    Spread the potatoes in a single layer on a large rimmed baking sheet or in a large roasting pan.

    Pat the chicken thighs dry with paper towels. In a small bowl, mix the garlic powder, onion powder, dried oregano, paprika, salt, and pepper.

    Rub the chicken thighs with the remaining olive oil and season both sides generously with the spice mixture.

    Nestle the chicken thighs onto the baking sheet among the potatoes.

    Place the pan in the oven and roast for about 30-35 minutes, or until the potatoes are starting to soften and the chicken is nearly cooked through.

    While the chicken and potatoes roast, toss the trimmed asparagus with a little olive oil, salt, and pepper.

    Remove the pan from the oven and add the asparagus to the sheet pan, spreading it out in the gaps between the chicken and potatoes.

    Pop the pan back into the oven and roast for an additional 10-15 minutes until the chicken skin is nice and crispy, the chicken reaches an internal temperature of 165°F, and the potatoes and asparagus are tender.

    Remove from the oven and let the chicken rest for 5 minutes before serving to allow the juices to redistribute.

Notes

The potatoes are the star here as they absorb all the rendered chicken fat and juices during the roasting process. Ensure the chicken skin is patted very dry before seasoning to get maximum crispiness.
