- 0.5 대 Green onion (Thinly slice)
- 1 개 Cheongyang chili pepper (Thinly slice)
- 2 tbsp Doenjang
- 1 tbsp Minced garlic
- 0.5 tbsp Korean chili flakes (Optional; use up to 1 tbsp)
- Sesame oil or cooking oil (Enough to lightly coat the pot)
- 400 ml Water or anchovy broth (400~500ml)
Steps
- 1
Cut the Korean zucchini, onion, and tofu into bite-sized pieces. Thinly slice the green onion and Cheongyang chili pepper.
- 2
Lightly coat a pot with sesame oil or cooking oil.
- 3
Add the minced garlic and pork to the pot.
- 4
Stir-fry until the outside of the pork turns white.
- 5
Once the pork is cooked and releases some fat, add the doenjang.
- 6
Stir-fry the doenjang and pork together gently for about 1 minute to bring out the doenjang’s rich, savory aroma.
- 7
Pour in 400~500ml of water or prepared anchovy broth and bring to a boil over high heat.
- 8
When the broth comes to a boil, add the firm Korean zucchini and onion.
- 9
Reduce the heat to medium and simmer for another 3~5 minutes, until the Korean zucchini and onion are cooked.
- 10
Add the tofu, green onion, and Cheongyang chili pepper.
- 11
Optionally, add 0.5~1 tbsp of Korean chili flakes.
- 12
Simmer gently for another 1~2 minutes to finish cooking the ingredients.
Notes
Stir-frying the pork with doenjang first deepens the doenjang’s savory flavor. The Korean chili flakes are optional.
