Strawberry Jam Twists
A quick and easy two-ingredient dough pastry filled with strawberry jam and cooked until golden. These mini rolls are made with Greek yogurt for a soft texture and can be prepared in either an air fryer or oven.

Ingredients
- 60 g self-raising flour (or 60g all purpose flour with 1/2 tsp baking powder; plus extra if dough is sticky)
- 50 g Greek yogurt (or soya yogurt; standard or full fat recommended)
- 1 tsp strawberry jam (heaped)

In a mixing bowl, combine the 60g of self-raising flour and 50g of Greek yogurt.

Mix the flour and yogurt together until they form a soft and smooth dough ball. The dough should not be sticky; if it is, add a small amount of additional flour until it is easy to handle.

On a lightly floured surface, roll the dough out into a rectangular shape.

Spread 1 heaped teaspoon of strawberry jam evenly over the surface of the dough rectangle.

Fold the dough rectangle in half.

Slice the folded dough into two equal strips.

Twist each strip and then roll it up into a knot shape to form two mini rolls.

To cook in an air fryer: Place the rolls in the basket and air fry at 180°C (350°F) for 10 minutes.

To cook in an oven: Place the rolls on a lined baking sheet and bake at 180°C (350°F) for 20 minutes until golden.
Notes
If using all-purpose flour instead of self-raising, ensure you add 1/2 tsp of baking powder to achieve the necessary rise. For best results, use a standard (not low fat) Greek yogurt to prevent the dough from becoming too gummy. Some users suggest baking at 350°F for 20-25 minutes in the oven for a better finish.
