Greek Yoghurt Almond Croissant Bread

Ingredients
- 3 tbsp Self-raising flour (heaped; can use brown or plain flour with 1/2 tsp baking powder)
- 2 tbsp Greek yoghurt (or soya yoghurt)
- 1 tbsp Flaked almonds (heaped; plus extra for topping)
- 1 tsp Almond extract
- Icing sugar (for dusting)

In a mixing bowl, combine the flour (and baking powder if using plain flour), Greek yoghurt, flaked almonds, and almond extract.

Mix everything together until it forms a thick dough.

Use your hands to squeeze and roll the dough into a soft and smooth ball. It should not be sticky; add a little more flour if needed.

Roll the dough ball into a long sausage shape, then twist and curve it into a crescent or croissant shape.

Press extra flaked almonds into the top of the dough.

To cook in an air fryer: Bake at 180°C (350°F) for 12 minutes, then turn the bread over and bake for another 3-5 minutes until golden.

Alternatively, to oven bake: Bake at 180°C (350°F) for approximately 25 minutes.

Once cooked and slightly cooled, dust generously with icing sugar before serving.
Notes
Gluten-free variation: Use gluten-free self-raising flour and add 1/3 tsp xanthan gum.
