Chili Garlic Noodles (Spicy, Quick, Vegan)
Spicy, quick and easy noodles flavored with lots of burnt garlic, scallions, cilantro, and chili oil. This gluten-free and vegan dish comes together in under 30 minutes.

Ingredients
- 10 oz ramen noodles (4 packets; Lotus Foods Millet & Brown Rice Noodles recommended)
- 2 tbsp avocado oil
- 0.25 cup garlic (sliced, about 13-14 cloves)
- 0.5 cup scallions (white and green parts)
- 2 tbsp tamari (gluten-free)
- 1 tbsp hoisin sauce (gluten-free)
- 1 tbsp chili vinegar (or rice wine vinegar)
- 2 tbsp chili oil crunch (Momofuku's recommended; ensure you include the 'crunch' bits)
- 0.5 cup cilantro (chopped)
- 0.25 cup green scallions (extra for garnish)
- 1 tbsp chili oil crunch (optional, for more spice)
- salt (a pinch)
- black pepper (to taste)
Steps

Heat a pot of water to boil the noodles. Follow the instructions on the package (Lotus Foods Brown Rice Ramen Noodles typically take about 5 minutes).

Taste the noodles to ensure they are done, then drain and run them under cold water to rinse off the excess starch. Set aside.

Heat a wok on medium heat. Once hot, add 2 tablespoons of avocado oil.

Add the sliced garlic and sauté for about 60 seconds until fragrant and slightly browned or golden.

Add 1/2 cup of scallions (both green and white parts) and cook for approximately 30 seconds.

Lower the heat and add the tamari, hoisin sauce, and chili vinegar.

Add 2 tablespoons of chili oil crunch, making sure to include a good amount of the solids (the 'crunch'). Stir for 45 seconds.

Add the drained noodles to the wok and toss well to coat in the sauce.

Add the chopped cilantro and toss again. Stir in the remaining 1/4 cup of green scallions.

Taste the dish. Add a pinch of salt if needed (be careful as the sauces are already salty) and black pepper to taste. If you prefer more heat, add an additional tablespoon of chili crunch. Toss and serve hot.
Notes
You can customize this dish by adding stir-fried vegetables like bell peppers or shiitake mushrooms, or your favorite protein like chicken. If you are sensitive to spice, start with a smaller amount of chili crunch (e.g., 1.5 teaspoons).
