Ingredients

  • 300 g spinach
  • 125 g flour
  • 75 g chickpea flour (or extra all-purpose flour)
  • 10 g baking powder
  • 8 eggs
  • 120 ml milk (dairy or plant-based)
  • 15 g fresh dill
  • 20 g fresh parsley
  • 250 g feta cheese (200-300g)
  • nutmeg (a generous pinch)
  • walnuts (a handful)
  • grated cheese (a handful)

Steps

  1. 1

Preheat your oven to 180°C (350°F). Line a rectangular baking dish with parchment paper.

  2. 2

Roughly chop the fresh spinach, dill, and parsley.

  3. 3

In a large mixing bowl, whisk the 8 eggs with the milk and a generous pinch of nutmeg.

  4. 4

Whisk in the flour, chickpea flour, and baking powder until a smooth batter forms.

  5. 5

Fold the chopped spinach, dill, and parsley into the batter.

  6. 6

Crumble the feta cheese into the mixture and stir gently to combine.

  7. 7

Pour the mixture into the prepared baking dish.

  8. 8

Top with a handful of crushed walnuts and a handful of grated cheese.

  9. 9

Bake in the preheated oven for approximately 50 minutes until golden brown and set.

  10. 10

Allow to cool slightly before slicing into squares for snacks or larger portions for a meal.

Notes

The recipe is very versatile; serve it warm or cold. If serving as a main meal, it pairs excellently with a fresh side salad. The chickpea flour adds a nice nutty flavor and extra protein, but can be replaced with regular flour if preferred. Based on user comments, ensure the spinach is relatively dry to avoid a soggy texture, though the flour usually absorbs the moisture during the long bake time.
