High Protein Garlic Shrimp Fried Rice

Ingredients
- 800 g Raw shrimp (Preferably Argentine; any type of shrimp can be used)
- 30 ml Light soy sauce (For the marinade)
- 10 ml Dark soy sauce (For the marinade)
- 1 tsp Black pepper
- 1.5 tsp Garlic powder
- 1.5 tsp Onion powder
- 1 tsp Chili flakes
- 15 g Light butter (To cook the shrimp)
- 80 g Light mayonnaise (For the Yum Yum sauce)
- 25 g Ketchup (For the Yum Yum sauce)
- 25 g Sriracha (For the Yum Yum sauce)
- 25 ml Rice vinegar (For the Yum Yum sauce)
- 0.5 tsp Paprika (For the Yum Yum sauce)
- 0.5 tsp Ground ginger (For the Yum Yum sauce)
- 1 tbsp Minced garlic
- 80 g Chopped green onions (Scallions)
- 100 g Frozen carrots
- 100 g Frozen peas
- 4 Eggs
- 540 g Cooked white rice (Day-old)
- 15 ml Soy sauce (For the rice)
- 30 g Oyster sauce
- 15 g Light butter (For the rice)
- Green onions (For garnish)

In a bowl, combine the shrimp with the light soy sauce, dark soy sauce, black pepper, garlic powder, onion powder, and chili flakes. Mix well and let marinate for 30 minutes for better flavor.

Prepare the Yum Yum sauce by mixing the light mayonnaise, ketchup, sriracha, rice vinegar, paprika, and ground ginger in a small container. Set aside.

Heat a large skillet or wok over medium-high heat and add 15 g of light butter. Add the marinated shrimp and cook until pink and cooked through. Remove the shrimp from the pan and set aside.

In the same pan, add the other 15 g of light butter. Stir in the minced garlic, chopped green onions, frozen carrots, and frozen peas. Sauté for a few minutes until the vegetables soften.

Push the vegetables to one side of the pan and crack the 4 eggs into the empty space. Scramble the eggs until cooked and then mix them with the vegetables.

Add the cooked white rice (preferably cold day-old rice) to the pan. Pour the soy sauce and oyster sauce over the rice.

Mix everything well, breaking up any rice clumps, and sauté for a few minutes so the flavors meld and the rice is completely heated through.

Return the cooked shrimp to the pan and mix one last time.

Serve the fried rice hot, garnished with fresh green onions and accompanied by the Yum Yum sauce.
Notes
If you don't have day-old rice, cook fresh rice and place it in the freezer to cool quickly. You can use cooking spray instead of butter to further reduce calories. The Yum Yum sauce can be prepared in batches and saved for other meals.
