High Protein Honey Lemon Chicken Meal Prep

Ingredients
- 700 g Raw Chicken Breast (cubed)
- 20 ml Light & Dark Soy Sauce (low sodium; for chicken marinade)
- 1 tsp Paprika
- 1 tsp Garlic Powder
- 1 Lemon Juice (juiced from 1 lemon; for chicken marinade)
- 2 tsp Olive Oil (for cooking)
- 15 g Honey (10-15g; for chicken glaze)
- 480 g Basmati Rice (cooked)
- 1 Red Onion (finely sliced)
- 1 Red Bell Pepper (chopped)
- 15 ml Dark Soy Sauce (for rice)
- 10 g Honey (for rice)
- 0.5 Lemon Juice (juiced from 1/2 lemon; for rice)
- Green Onion (garnish)

Slice the chicken breast into even cubes and place them in a bowl.

Add the 20ml soy sauce, 1 tsp paprika, 1 tsp garlic powder, and the juice of 1 lemon to the chicken. Mix thoroughly until the chicken is well seasoned and the color has changed. For best flavor, marinate for 30 minutes or overnight.

Heat 2 tsp olive oil in a pan over medium heat. Add the chicken and cook until golden brown and cooked through.

Turn off the heat. Add 10-15g of honey to the pan and mix until the chicken is coated and sticky. Remove the chicken from the pan and set aside.

In the same pan, add the finely sliced red onion and chopped red bell pepper. Cook for about 5 minutes until softened.

Add the 480g of cooked basmati rice to the pan with the vegetables.

Pour in 15ml dark soy sauce, 10g honey, and the juice of 1/2 a lemon. Mix well to combine all ingredients.

Add the cooked chicken back into the pan with the rice and vegetables. Mix briefly to incorporate.

Garnish with sliced green onions, then distribute into 4 equal servings.
Notes
Important: Turn off the heat before adding honey to the chicken to prevent it from burning. Meal prep can be stored for up to 5 days in the fridge or frozen for months. Reheat in a microwave or on a pan.
