Italian Sandwiches: Caprese and Mortadella

Ingredients
- 1 Rustic wood-fired bread (For the Caprese sandwich)
- Extra virgin olive oil (EVOO) (For drizzling)
- 0.5 Tomato (Sliced)
- Black pepper (To taste)
- Fresh basil (A few leaves)
- 60 g Fresh mozzarella (Sliced)
- 3 lonchas Serrano ham or Prosciutto (Premium quality)
- 1 Rustic wood-fired bread (For the Mortadella sandwich)
- 6 lonchas Italian mortadella (Divided for two layers)
- 3 Sun-dried tomatoes in oil (Drained)
- 20 g Parmesan or Pecorino cheese (Shaved)

For the Caprese sandwich: Open the rustic bread in half and drizzle a little extra virgin olive oil on the inside of both halves.

Place a few tomato slices on the base of the bread and season with ground black pepper to taste.

Add a few fresh basil leaves and place the sliced fresh mozzarella on top.

Finish with a few slices of Serrano ham or prosciutto and close the sandwich.

For the Mortadella sandwich: Open the bread and apply a bit of extra virgin olive oil to the inside.

Place a first layer of Italian mortadella slices.

Add the sun-dried tomatoes in oil and some shavings of Parmesan or Pecorino Romano cheese.

Finish with a few more mortadella slices to cover and close the bread.
Notes
For best results, use freshly bought wood-fired bread. If you want an extra touch in the Caprese sandwich, you can add a bit of pesto sauce as suggested in the comments.
