Healthy Millionaire’s Shortbread
A no-bake, high-protein take on classic British millionaire’s shortbread. Almond flour forms the base, followed by a Biscoff-peanut-butter caramel layer and a thin chocolate topping finished with sea salt.

- 80 g Almond flour

Line an 8 × 8-inch baking tin with parchment paper, leaving some overhang so the finished shortbread can be lifted out easily.

Add the almond flour, vanilla protein powder, 35 ml coconut oil, and 55 ml sugar-free maple syrup to a bowl. Mix until the ingredients form a cohesive, thick mixture with no dry pockets.

Transfer the bar mixture to the lined tin. Press it firmly and evenly into the bottom, using the back of a spoon or the bottom of a flat glass to compact it.

Add the Biscoff spread, powdered peanut butter, 10 ml coconut oil, vanilla extract, and 50 ml sugar-free maple syrup to a clean bowl. Mix until smooth and well combined.

Spread the caramel mixture evenly over the pressed bar layer, taking it all the way to the edges.

Freeze the layered mixture for 2 hours, or until the base and caramel layer are firm.

Melt the chocolate chips and 5 ml coconut oil together until smooth. Use a microwave in short intervals, stirring between intervals, or melt them gently over a double boiler; avoid overheating the chocolate.

Pour the melted chocolate over the frozen peanut-butter caramel layer and spread it into an even topping. Immediately sprinkle the surface with sea salt.

Return the tin to the freezer for another 30 minutes, until the chocolate topping is set.

Lift the slab from the tin using the parchment overhang and slice it into 12 bars. Serve cold or slightly softened, as desired.
