Ingredients

  • 400 ml Dairy-free milk
  • 1 tbsp Apple cider vinegar
  • 500 g Plain white flour (Use 350 g for the cake and 150 g for the crumble.)
  • 1 tsp Baking soda
  • 0.75 tsp Baking powder
  • 0.25 tsp Salt
  • 30 g Pure Dairy Free Buttery Taste Spread (Melted; for the cake batter.)
  • 200 g Caster sugar
  • 1 tbsp Vanilla extract (For the cake batter.)
  • 130 ml Vegetable oil
  • 4 tbsp Pure Dairy Free Buttery Taste Spread (For cooking the apples.)
  • 3 Pink Lady apples (Sliced.)
  • 70 g Soft brown sugar (For cooking the apples.)
  • 1 tsp Cinnamon (Use 1 tsp for the apples and 1 tsp for the crumble.)
  • 0.5 tsp Vanilla extract (For cooking the apples.)
  • 100 g Pure Dairy Free Buttery Taste Spread (Melted; for the crumble.)
  • 100 g Soft light brown sugar (For the crumble.)
  • Vanilla bean ice cream (For serving; quantity not specified. Use a vegan variety to keep the cake vegan.)

Steps

  1. 1

Preheat the oven to 180°C / 350°F. Line an 8-inch round cake tin with baking paper and grease the sides.

  2. 2

In a large bowl, whisk together the dairy-free milk and apple cider vinegar. In a separate bowl, mix together the 350 g flour, baking soda, baking powder, and salt.

  3. 3

Add the 30 g melted dairy-free spread, caster sugar, 1 tablespoon vanilla extract, and vegetable oil to the milk mixture. Whisk until fully combined and emulsified.

  4. 4

Gradually whisk the dry flour mixture into the wet mixture until you have a smooth batter.

  5. 5

Pour the batter into the prepared cake tin and bake for 40 minutes, until mostly baked.

  6. 6

While the cake bakes, heat a frying pan over medium heat. Add the 4 tablespoons dairy-free spread, sliced apples, soft brown sugar, 1 teaspoon cinnamon, and ½ teaspoon vanilla extract. Cook until the apples are slightly softened and a cinnamon sauce begins to form, then remove the pan from the heat.

  7. 7

In a bowl, combine the 100 g melted dairy-free spread, 150 g flour, light brown sugar, and 1 teaspoon cinnamon. Rub the mixture together with your fingers until it resembles coarse crumbs.

  8. 8

Remove the cake from the oven. Arrange the cooked apples on top, reserving the leftover apple caramel sauce for serving, then add the crumble topping.

  9. 9

Return the cake to the oven and bake for 20–25 minutes, until the crumble is golden and the cake is fully baked; a toothpick inserted into the cake should come out clean.

  10. 10

Allow the cake to cool slightly. Serve warm with vanilla bean ice cream and the reserved caramel sauce.

Notes

The post describes the cake as vegan. Choose a vegan dairy-free milk and vegan vanilla bean ice cream to keep it fully vegan. The source does not specify how much ice cream to serve.
