Ingredients
- 215 g all purpose flour (plus extra for dusting)
- 12 g baking powder
- 65 g vanilla protein powder (PEScience whey/casein blend recommended)
- 375 g nonfat Greek yogurt (350-400g range provided; use enough to form a dough)
- 60 g zero calorie brown monkfruit sweetener
- 40 g light margarine
- 100 g zero calorie brown monkfruit sweetener (for filling)
- 10 g cinnamon
- 60 g light cream cheese
- 30 g vanilla protein powder (for frosting)
- 30 g zero calorie powdered monkfruit sweetener
- 5 ml vanilla extract
- water (as needed for frosting consistency and dough texture)

Preheat your oven to 350°F (175°C).

In a large glass bowl, combine the flour, baking powder, 65g vanilla protein powder, Greek yogurt, and 60g brown monkfruit. Mix until a dough forms, using your hands towards the end to bring it together. If the dough is too dry, add a small amount of water.

Lay a piece of parchment paper on a flat surface and sprinkle it with a little flour. Place the dough on the paper and press another piece of parchment paper on top.

Use a rolling pin or a smooth glass to roll the dough out into a large rectangle between the parchment sheets.

In a small bowl, mix the filling ingredients (light margarine, 100g brown monkfruit, and cinnamon) together until combined.

Pour the filling mixture over the rolled-out dough and spread it evenly to the edges.

Carefully roll the dough into a tight log, then slice it into 8 even rolls.

Place the rolls into a baking tin lined with parchment paper. Bake for 20 minutes.

While the rolls bake, whisk together the frosting ingredients (light cream cheese, 30g vanilla protein powder, powdered monkfruit, and vanilla extract). Add water a teaspoon at a time until you reach your desired drizzling consistency.

Once the rolls are finished baking, pour the frosting over them while they are still warm. Enjoy immediately.
Notes
