Udon Noodle Stir Fry Beef

Ingredients
- 1 lb beef (thinly sliced)
- 2 carrots (julienned)
- 8 oz mushrooms (sliced)
- 1 bell pepper (any color, sliced)
- 1 onion (sliced)
- 4 brick frozen udon noodles
- sesame oil (drizzle for noodles)
- olive oil (for cooking)
- garlic (minced)
- salt (to taste)
- black pepper (to taste)
- 2 tsp soy sauce (for seasoning beef)
- 2 tsp dark soy sauce (for beef color)
- 1 tbsp brown sugar (for sauce)
- 3 tsp dark soy sauce (for sauce)
- 3 tsp low sodium soy sauce (for sauce)
- 4 tsp rice vinegar (for sauce)
- 2 tbsp oyster sauce (for sauce)
- 1 tbsp sesame oil (for sauce)
- scallion (chopped, for garnish)

Prep all of your veggies because once you start cooking it will go by very fast. Slice your onions, julienne carrots, slice mushrooms, and cut bell pepper into strips. If you need to thinly slice your beef, do it now.

Bring a pot of water to a boil. Add the 4 bricks of frozen udon noodles and cook for a couple of minutes until tender.

Once the noodles are done cooking, rinse and drain well under cold water. To prevent noodles from sticking, drizzle some sesame oil all over and give it a nice mix.

In a separate bowl, whisk together the sauce ingredients: 1 TBSP brown sugar, 3 tsp dark soy sauce, 3 tsp low sodium soy sauce, 4 tsp rice vinegar, 2 TBSP oyster sauce, 1 TBSP sesame oil, and salt and black pepper to taste.

In a pan or wok, heat up some olive oil and saute your minced garlic until fragrant.

Add the thinly sliced beef, spreading it out into a nice even layer. Leave to cook untouched for a couple of minutes or until it starts to brown.

Season the beef with salt and black pepper to taste, 2 tsp soy sauce, and 2 tsp dark soy sauce. Mix well and cook for another 1-2 minutes, then remove the beef from the heat and set aside.

In the same pan, heat a little more oil if needed and cook more minced garlic until fragrant. Add the mushrooms and cook for approximately 1 minute.

Add the onions, carrots, and bell pepper to the pan. Cook for 3-5 minutes until the vegetables are tender-crisp.

Add the cooked udon noodles to the pan and give it a little mix to combine with the vegetables.

Add the cooked beef back into the pan and mix.

Pour in the prepared sauce mixture. Stir until everything is well combined and heated through.

Turn off the heat and finish the dish with a garnish of chopped scallions.
Notes
You can easily substitute the vegetables for ones you already have on hand. If you don't have udon noodles, spaghetti or fettuccine also work well with this recipe.
