15-Minute One-Pot Creamy Harissa Chicken Pasta
A quick, spicy and silky one-pot pasta combining browned chicken, rose harissa, tomato purée and cream. Melted cheese makes the sauce rich and comforting, while fresh herbs add a bright finish.

Ingredients
- 500 g chicken breast (Diced)
- 1 tbsp chicken seasoning (Used to season the chicken)
- 2 tsp garlic purée (Or use 2 garlic cloves)
- 1 tbsp tomato purée
- 1 tbsp rose harissa paste (Add more to taste for extra heat)
- 300 ml chicken stock (Hot)
- 100 g single cream
- 500 g fresh pasta
- 120 g cheese (A mixture of cheddar, Red Leicester and mozzarella)
- fresh parsley or basil (Optional, for garnish)

Place the diced chicken breast in a bowl and season evenly with the chicken seasoning.

Heat a large, wide pan over medium-high heat. Add the seasoned chicken and cook for 4–5 minutes, stirring occasionally, until it is beginning to brown and is no longer raw on the outside.

Add the garlic purée, tomato purée and rose harissa paste to the pan. Stir to coat the chicken and cook for about 30 seconds, until fragrant.

Pour in the hot chicken stock and stir to loosen the mixture and combine the ingredients.

Stir in the single cream until the liquid is evenly combined and creamy.

Add the fresh pasta to the pan and stir well so it is coated in the sauce.

Cover the pan and simmer for 4–5 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened. If the sauce thickens too quickly, reduce the heat slightly and stir to prevent sticking.

Sprinkle the cheese evenly over the pasta. Replace the lid and leave the pan for 1–2 minutes, until the cheese has melted.

Garnish with fresh parsley or basil, if using, and serve immediately.
