Ingredients
- 150 g Bacon lardons
- 1 Onion (Finely diced)
- 2 Peppers (Finely chopped)
- 100 g Tenderstem broccoli (Finely chopped)
- 2 Garlic (Cloves, grated)
- 1 tbsp Tomato purée
- 1 tbsp White wine vinegar (Alternatively, use 50 ml white wine)
- 3 tbsp Plain flour
- 800 ml Chicken stock
- 200 ml Semi-skimmed milk
- 1 tsp Dried parsley
- 1 tsp Dried oregano
- 1 tsp Dried chives
- 500 g Gnocchi
- 350 g Cooked chicken (Shredded or diced. If no leftover chicken is available, cook 500 g raw chicken breast before starting, then shred or dice it.)
- Salt and black pepper (To taste)
- Crusty bread (For dipping; not included in the stated macros)
Steps
- 1
If using raw chicken instead of leftover cooked chicken, cook 500 g chicken breast before beginning. Shred or dice it; the source suggests cooking it in an air fryer, or dicing and cooking it in the pan first, then removing it before adding the bacon.
- 2
Place the bacon lardons, diced onion, chopped peppers, and finely chopped tenderstem broccoli in a large pan over medium heat.
- 3
Cook, stirring regularly, until the bacon is cooked through and the vegetables are soft and tender.
- 4
Add the grated garlic, tomato purée, and either the white wine vinegar or white wine. Cook everything together for another minute.
- 5
Add the plain flour, stir well, and cook for around 1 minute to cook off the flour.
- 6
Gradually pour in the chicken stock and semi-skimmed milk a little at a time, stirring continuously until the liquid is fully combined and there are no lumps.
- 7
Add the dried parsley, dried oregano, and dried chives, then stir well.
- 8
Add the gnocchi and cooked chicken to the pan.
- 9
Bring the soup to a gentle simmer. Cook for around 5–7 minutes, stirring occasionally, until the gnocchi is tender and the soup has thickened.
- 10
Season to taste with salt and black pepper.
- 11
Spoon the soup into bowls and serve with plenty of crusty bread for dipping.
