Rice Paper Almond Croissant

- 1 egg (for filling)
- 2 tbsp coconut sugar
- 1 tbsp cashew or almond butter
- vanilla extract (generous dash)
- 0.5 cup almond flour
- 2 eggs (for pastry dip)
- maple syrup (dash)
- 1 tbsp coconut oil
- 6 rice paper sheets
- flaked almonds (for topping)
- powdered monk fruit (for dusting)

In a small bowl, combine the filling ingredients: 1 egg, 2 tbsp coconut sugar, 1 tbsp cashew or almond butter, a generous dash of vanilla extract, and 1/2 cup almond flour. Mix until well combined and set aside.

In a shallow saucepan or wide dish, combine the pastry dipping ingredients: 2 eggs, a dash of maple syrup, and 1 tbsp coconut oil. Whisk together until smooth.

Take one rice paper sheet and dip it into the egg and coconut oil mixture until fully coated and softened.

Place the softened rice paper on a clean surface and add approximately one tablespoon of the prepared almond filling to the center.

Assemble the croissant by folding the rice paper over the filling and rolling it into a croissant shape as shown in the video. Repeat with the remaining rice paper sheets and filling.

Top each assembled croissant with flaked almonds, pressing them slightly into the surface so they stick.

Place the croissants in the air fryer basket and cook for 10 minutes at 180°C (350°F).

Remove from the air fryer, top with a dusting of powdered monk fruit, and enjoy while warm.
Notes
The author mentions this is a great 'hyper fixation' sweet for those with dietary limitations. If you don't have monk fruit, powdered sugar can be used as a substitute for the topping. Ensure the rice paper is fully softened in the egg wash to prevent cracking during assembly.
