Fudgy Tahini Brownies
Rich, gooey brownies made with runny tahini, cacao, maple syrup, and coconut sugar. They are gluten-free, dairy-free, and refined-sugar-free, with chewy edges and an almost raw, fudgy center when slightly underbaked.

Ingredients

- 1 cup hulled tahini (Use runny tahini only; do not use clumpy or unhulled tahini.)
- 0.333 cup coconut sugar
- 0.25 cup cacao or cocoa powder
- 2 tbsp almond flour
- 0.333 cup maple syrup
- 250 g chocolate (Use dairy-free chocolate if needed. Melt a handful and chop the remainder; the author encourages using more than 250 g if desired.)
- 1 tsp baking powder
- salt (For topping, to taste.)

Preheat the oven to 180°C fan-forced (350°F convection). Line a small baking tin with parchment paper, leaving enough overhang to lift out the brownies.

In a mixing bowl, combine the egg, runny hulled tahini, and maple syrup. Stir until the wet mixture is smooth and evenly blended.

Add the coconut sugar, cacao or cocoa powder, almond flour, and baking powder to the wet mixture. Fold the dry ingredients in until no dry pockets remain; avoid overmixing.

Melt a handful of the chocolate gently until smooth. Chop the remaining chocolate into pieces.

Add the melted chocolate and half of the chopped chocolate to the brownie batter. Stir until evenly distributed.

Transfer the batter to the lined baking tin and spread it into an even layer. Scatter or reserve the remaining chopped chocolate over the top.

For the fudgiest texture, let the filled tin rest for 30 minutes before baking; freezing is the author's preferred option for this resting period.

Bake for 20–27 minutes, until the outside looks cooked and set while the center still looks almost raw. Do not overbake if you want a gooey middle.

Remove the brownies from the oven and immediately finish with salt to taste. Serve warm and very gooey with a spoon, or let them cool enough to slice.
