Weights are estimates. Together, the ingredients weigh about 910 g before cooking, which is about 75 g per serving.
Steps
In a bowl, combine the wet ingredients: 1 cup warm soy milk and 1 tablespoon sesame oil.
In a separate large bowl, mix the dry ingredients: 3 cups flour, 2 teaspoons instant yeast, 1/4 cup sugar, 1 tablespoon toasted sesame seeds, and 1/2 teaspoon salt.
Combine the wet and dry ingredients to form a dough. Knead until smooth and elastic, then allow to rise in a warm place until doubled in size.
Prepare the filling by mixing 2 cups chopped scallions, 1/2 teaspoon salt, 1/2 teaspoon five spice powder, and 2 teaspoons toasted sesame seeds in a heat-proof bowl.
Heat 1/3 cup neutral oil (microwave for 2.5 minutes until very hot) and carefully pour it over the scallion mixture. Stir to combine.
Divide the risen dough into 12 equal portions. Flatten each piece, place a portion of the scallion filling in the center, and pleat or pinch the edges to seal into a bun.
Heat a small amount of oil in a pan over medium heat. Place the buns in the pan and fry until the bottoms are golden brown.
Add a splash of water to the pan and immediately cover with a lid to steam the buns until the water has evaporated and the buns are cooked through.
Remove the lid and continue to fry for another minute to re-crisp the bottoms. Garnish with extra spring onions and sesame seeds before serving.
Notes
The source mentions that steps are in the comments, which were not fully provided in the text block; however, the method for the filling (hot oil pour) is explicitly detailed in the ingredients list. Standard pan-frying/steaming method for buns is inferred based on the title and 'oil and water for cooking' ingredients.
