Ingredients
- 500 g vine tomatoes (Halved)
- 500 g king prawns
- 50 g salted butter (Softened)
- 30 g fresh parsley (A handful, plus extra chopped parsley for finishing)
- 2 red chillies (Charred; approximately 30 g total)
- 5 cloves garlic (Approximately 15 g total)
- 1 lemon lemon juice (Juice of 1 lemon, approximately 45 g)
- sea salt (For the tomatoes, compound butter, and pasta water; to taste)
- black pepper (To taste)
- 30 g olive oil (Plenty, for cooking the tomatoes)
- 300 g linguine (Dry weight)
- 120 ml pasta water (Reserved after boiling, as needed for the sauce)
- 50 g Parmesan (Grated; or however much desired)
Steps
- 1
Halve the vine tomatoes. Cook them over low heat with plenty of olive oil and sea salt until they become soft and jammy, approximately 15 minutes.
- 2
Char the red chillies using the source's preferred method. The source does not specify the heat level, equipment, or timing for charring.
- 3
Place the charred chillies, parsley, garlic, and lemon juice in a food processor. Blitz until finely processed.
- 4
Add the softened salted butter to the food processor and blitz until the ingredients come together into a compound butter. Taste and add salt if necessary.
- 5
Boil the linguine until al dente, approximately 10–15 minutes. Reserve some of the pasta water for the sauce before draining.
- 6
Rinse the drained linguine in cold water to prevent it from sticking.
- 7
Add the king prawns and compound butter to the jammy tomatoes. Season with sea salt and black pepper.
- 8
Cook the prawns and compound butter with the tomatoes for 2–3 minutes.
- 9
Add the linguine to the tomato and prawn mixture, loosening with some of the reserved pasta water as needed for the sauce.
- 10
Add grated Parmesan and some chopped parsley. Mix everything together and serve hot.
Notes
The source does not specify the method or timing for charring the chillies, or the amount of olive oil, Parmesan, reserved pasta water, salt, or pepper. Quantities for these ingredients are practical estimates where the source says 'plenty,' 'some,' or 'to taste.'
