- 0.25 tsp baking soda
- 1 tsp white pepper (For the beef marinade)
- 1 tbsp oyster sauce (For the beef marinade)
- 1 tbsp dark soy sauce (For the beef marinade)
- 1 tbsp light soy sauce (For the beef marinade)
- 1 tsp brown sugar (For the beef marinade)
- 3 tbsp sesame oil (For stir-frying)
- 1 onion (Roughly chopped)
- 3 garlic (Cloves, minced)
- packet stir-fry vegetable mix (The author uses a packet from Sainsbury’s. Alternatively, use chopped spring onions, red peppers, bean sprouts, cabbage, and carrots.)
- 4 packets cooked udon noodles
- 2 tbsp oyster sauce (For the stir-fry sauce)
- 2 tsp dark soy sauce (For the stir-fry sauce)
- 2 tsp light soy sauce (For the stir-fry sauce)
- 1 tsp chicken powder
- 1 tsp white pepper (For the stir-fry seasoning)
- 1 tsp brown sugar (For the stir-fry seasoning)
- 1 tsp ginger powder
- sesame seeds (For garnish; amount not specified)
Steps
- 1
Combine the beef strips with the marinade ingredients: sesame oil, baking soda, white pepper, oyster sauce, dark soy sauce, light soy sauce, and brown sugar. Leave to marinate for at least 30 minutes, preferably overnight.
- 2
Heat a wok over high heat and add the sesame oil for stir-frying.
- 3
Add the marinated beef to the hot wok and cook for about 3 minutes. Avoid overcooking it, as the beef should not become tough.
- 4
Remove the cooked beef from the wok.
- 5
Add the roughly chopped onion and minced garlic to the wok. Fry until browned.
- 6
Add the stir-fry vegetable mix. Cook over medium heat until the vegetables have softened.
- 7
Add the cooked udon noodles and return the beef to the wok.
- 8
Add the oyster sauce, dark soy sauce, light soy sauce, chicken powder, white pepper, brown sugar, and ginger powder. Mix until the noodles, beef, vegetables, sauces, and seasonings are well combined.
- 9
Garnish the stir-fry with sesame seeds and serve.
Notes
The stir-fry vegetable mix may be replaced with chopped spring onions, red peppers, bean sprouts, cabbage, and carrots. The source does not specify the packet size for the vegetable mix or udon noodles, nor the amount of sesame seeds for garnish.
