Ingredients

  • 3 chicken thighs (de-boned and sliced)
  • 2 tsp corn flour
  • 1 tsp salt
  • 1 tsp white pepper
  • 2 tbsp sesame oil (for marinade; plus more for frying)
  • 4 tbsp dark soy sauce (divided (2 tbsp for marinade, 2 tbsp for sauce))
  • 10 scallions (also known as green onions, chopped)
  • 3 tbsp ginger (grated)
  • 1 red chilli pepper (diced)
  • 2 tbsp sweet soy sauce (kecap manis)
  • 1 packet ramen seasoning (or 1.5 tsp chicken bouillon)
  • 12 oz noodles (noodles of your choice, cooked)

    In a bowl, combine the sliced chicken thighs with 2 tsp corn flour, 1 tsp salt, 1 tsp white pepper, 2 tbsp sesame oil, and 2 tbsp of dark soy sauce. Mix well to ensure the chicken is evenly coated.

    Let the chicken marinate for 30 minutes to allow the flavors to penetrate.

    Heat a pan over high heat. Add the marinated chicken and fry for approximately 10 minutes until cooked through and browned.

    Remove the cooked chicken from the pan and set aside.

    In the same pan, add a little more sesame oil if needed. Add the chopped scallions, diced red chilli pepper, and grated ginger. Fry until the aromatics have softened and become fragrant.

    Add 2 tbsp of dark soy sauce, 2 tbsp of sweet soy sauce (kecap manis), and 1 packet of ramen seasoning (or chicken bouillon) to the pan.

    Add the cooked chicken and your choice of cooked noodles back into the pan.

    Stir everything together over the heat until the noodles are well-coated in the sauce and all ingredients are thoroughly combined.

Notes

The author recommends using Nongshim ramen seasoning or chicken bouillon for the savory base. Kecap manis (sweet soy sauce) provides a unique thick, sweet-savory profile; if unavailable, you can substitute with a mix of soy sauce and brown sugar.
