Cabbage Alfredo with Chicken

Ingredients
- 1 head green cabbage (cut into strips)
- 2 chicken breasts (boneless and skinless)
- olive oil spray (for coating chicken)
- 2 tbsp cooking oil (divided; for chicken and vegetables)
- 1 oz water (to deglaze the pot)
- 1 cup tri-color bell peppers (sliced)
- 0.5 cup onion (sliced)
- 1 tbsp garlic (minced)
- 15 oz jarred Alfredo sauce (one standard jar)
- Italian seasoning (to taste)
- salt and pepper (to taste)

Cut the head of cabbage into thin strips and set aside.

Prep the chicken breasts by spraying with olive oil and seasoning with your preferred spices.

Heat a pot with a little oil and cook the chicken for about 10 minutes on each side until fully cooked through. Remove the chicken from the pot and set aside.

In the same pot, add the cabbage strips along with 1 ounce of water to deglaze the bottom and pick up the chicken flavor.

Cook the cabbage down for a few minutes, stirring continuously, and add your preferred seasonings.

Once the cabbage is soft, remove it from the pot and set aside.

Add a little more oil to the pot and sauté the tri-color bell peppers and onions with seasonings until they are soft.

Add the minced garlic to the vegetables and sauté briefly until fragrant.

Pour in the jar of Alfredo sauce. Season with Italian seasoning, salt, and pepper to taste.

Add the cooked cabbage back into the pot and stir to combine with the sauce and vegetables.

Add the chicken back into the pot. Cover and allow everything to cook together on low heat for about 15 minutes.
Notes
The author suggests using whatever seasonings you prefer for the chicken and cabbage. Jarred Alfredo sauce is used for convenience, but can be substituted with homemade sauce if desired.
